Fascinating complex wine! Traditionally made, bone dry Muscat from certified organic and dry-farmed grapes. Take your time and savour, allowing the aromas and flavours to unwind in the glass. Gloriously floral nose with mandarin oranges, pineapple and the sweet pepperiness of fresh basil. Taste is minerally and citrus with great depth and texture – 6 months spent on skins will do that. Fermented and aged in large clay amphoras with minimal intervention. A blend of 80% Grenache, 15% Carignan and 5% Mourvèdre. The Grenache vines that are used for this wine are over 50 years of age and have been bio-dyanmically farmed for many years now. Dark in colour, with savoury, spicy flavours. Staff Pick: Paul Bara Champagne Brut 2005

Awesome, full bodied, dry and powerful, it’s floral and zesty on the nose, with ripe lemon, toasty brioche and honeyed nuts on the palate. Fine, elegant mousse and great lingering finish. Beautiful now but try it again in 4 or 5 years.
