“A blend of 48% Chardonnay, 43% Pinot Noir, 6% Pinot Gris and 3% Pinot Meunier. The Cuvée M appeals to sparkling wine aficionados with a bit of a sweet tooth. It is a soft, elegant wine that showcases powerful ripe fruit flavors of Napa Valley. Cuvée M displays a graceful stream of fine bubbles, a lovely peach-rose hue, and fresh white and yellow stone fruit aromas complemented by notes of wild strawberry, fresh baked bread, vanilla and honey. Staff Pick: 2014 Herdade de Peso Trinca Bolotas Tinto

I’ve nicknamed this wine “The Pig Wine” due to the large porcine animal on the label. Bright, intense red in colour, this wine jumps out of the glass with aromas of ripe red and black fruits. The Alicante Bouschet provide structure and backbone and gives a slight floral element to the wine. Gagliole’s 2012 Chianti Classico is striking. Beautifully smooth aromas of pure raspberry and blackberry fruit. Texture reigns supreme in a super-expressive Chianti that hits all the right notes. Sweet flora nuances meld into red cherry, mint, spice and rose petal. It’s medium-bodied with crisp acidity, fine tannins and very delicious. 100% Verdejo. Green-tinged yellow. Clean aromas of ripe kiwi and fresh quince carry with intensity over the palate. A hint of lemon pith adds refreshing cut and bitterness, with a subtle floral nuance emerging on the back half. I love this style of wine! Staff Pick: 2013 Vina Gormaz Joven

Tempranillo often causes winemakers some trouble as it is highly susceptible to many diseases. Despite this, plenty winemakers continue to persevere with this varietal, as it is perfect for producing delicious complex single variety and blended wines, packed full of classic Spanish flavours. Grown in the elevated vineyards of Ribera del Duero, Gomaz’s 2013 Joven is bright and its youthful side is on display in this wine, tempered only by dark fruits and the sweet vanilla notes of American oak barrels. This is a gentler version of a Ribera del Duero red. Gormaz 2013 Joven will match beautifully with rosemary roast chicken or pork roast. Staff Pick: 2010 Kingston Family Syrah “Lucero”

This wine is lush. Lots of berry fruit on the nose, along with the typically Syrah note of pepper, and a hint of meatiness, which I expect will increase with further age. In addition to all that, there’s a fresh mintiness on the palate that lifts the other, darker toned flavours. The tannins are smooth and make for a long, luxuriant finish. If it isn’t clear already, this wine was made for North African style lamb with mint sauce. The 2010 Red Wine is a declassified blend of mostly Cabernet Sauvignon, yet has 15% Merlot with a splash of Malbec, Petit Verdot and Cabernet Franc in there as well. Intense aromas of spicey red and black fruits, toast, cedar, vanilla and hints of chocolate. The 80% old vine Grenache shines through here with spicy splashes of high frequency red fruit and minerality, flanked by licorice, rhubarb, flowers and herbs. The blend is rounded out by the hard-working Mourvedre. Was still delicious on the second night. My go-to Aussie red, it has a distinctive lavender nose. Hailing from Coonawarra, it’s a little lighter than some other Cabs, with emphasis on blackcurrant fruit, and notes of dry leaves, cigar box, and dense cassis.
